All about the coffee. If you're a coffee snob or just love coffee, then this is the place to experience caffeine heaven. The Expedition Program cofee is an experience you don't want to miss. The vibrant atmosphere, food and staff are pretty good too! Drop in - you won't regret it....

Without fail, Pablo and Rusty's Sydney has become my go-to spot whenever I'm in the vicinity. The service is swift without compromising on exceptional quality, making every visit a delight. Their coffee embodies perfection, crafted just the way it should be, ensuring an unparalleled experience with every sip. Update 13-11-2024 Pablo and Rusty's: A CBD Gem Still Shining Bright Pablo and Rusty's continues to hold its own as a top-notch cafe on Castlereagh Street. My recent breakfast visit confirmed that their commitment to quality and flavor remains strong. I started with a Volcan Azul, Costa Rica coffee, and it was a delightful way to begin the day. The sweet and fruity notes were prominent, and the presentation was impeccable. Served as a double shot with a side of grounds and sparkling water, it felt like a truly premium coffee experience. The food was equally impressive. The Artichoke Bruschetta was a revelation. Served on chewy sourdough, the combination of artichoke, cottage cheese, shallots, and crispy butter beans was a symphony of textures and flavors. The addition of perfectly soft-boiled eggs and crispy bacon elevated the dish to another level. Those crispy butter beans? Absolutely stunning. For a sweet treat, the Portuguese Custard Tart was a must-try. This generously sized tart boasted a crisp, golden crust and a luscious, creamy custard filling with a hint of caramel. It was the perfect ending to a satisfying breakfast. Beyond the delicious food and coffee, Pablo and Rusty's offers impeccable service in a well-presented and clean setting. The staff is friendly and efficient, and the food arrives promptly. It's no wonder this cafe is a go-to spot in the area. If you're looking for a delicious and reliable breakfast or lunch in the CBD, Pablo and Rusty's is a must-visit.

Absolutely awesome NYC-esque ambience. So cozy. The flat white is one of the nicest I have had in my life, such a rich taste and heated to the perfect temperature. I love that they have macadamia milk. The cheese and tomato toastie was also the most perfect toastie I have ever had, with the correct balance of completely melted cheesiness and cripsy bread. I was floored. This should be a benchmark for how every toastie should be made. So glad I decided to pop in on this rainy day because it’s now one of my favourite Sydney cafes.

Lovely food atmosphere and staff. Lunch menu is simple and limited for me but I think that allows the food to be made well and quickly. I had the chicken sandwich and the ingredients were quality, chicken was tender, brioche buns were toasted and buttery and the sauce was just right I sampled the coffee flight. It's nice there's some information on the individual servings and the drinks were made with care. I'm a simple flat white enthusiast, but the expresso and filter coffee was a standout. The trailblazer coffee was a bit too milky and safe/boring but coffee is a personal preference. None of the drinks were bad and I enjoyed it.

I’ve come here a couple of times for lunch now in the week and it’s been great both times. It’s nice to be able to get something a bit fancier than a sandwich for lunch but in a nice casual cafe setting. Fast service too. Would highly recommend, the food is great and I’ve heard the coffee of really nice too. This time I got the asparagus risotto and I loved it.
